Feta Chicken
This Feta Chicken recipe brings Mediterranean flavor to your table with minimal effort. Tender chicken breasts are baked with juicy cherry tomatoes, garlic, herbs, and crumbled feta cheese, creating a rich and tangy sauce as it cooks. Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 ½ cups cherry or grape tomatoes, halved
- 1 tsp dried oregano (or 1 tbsp fresh)
- ½ tsp crushed red pepper flakes (optional)
- 1/2 cup crumbled feta cheese
- Fresh basil or parsley, chopped (for garnish)
Instructions:
- Preheat oven to 400°F (200°C).
- Pat chicken breasts dry and season both sides with salt and pepper.
- In an oven-safe skillet, heat olive oil over medium heat. Sear chicken 2–3 minutes per side for extra flavor (optional but recommended).
- Scatter garlic and tomatoes over and around the chicken. Sprinkle with oregano and red pepper flakes. Top evenly with crumbled feta.
- Transfer skillet (or use a baking dish) to the oven. Bake for 20–25 minutes, or until chicken is cooked through (internal temp of 165°F / 74°C).
- Garnish with fresh basil or parsley. Serve hot with your favorite side.
