This Cucumber Mint Limeade is light, hydrating, and naturally cooling — an ideal summer picnic drink. With fresh lime juice, crisp cucumber, and a burst of mint, it's sweetened just enough to balance the tartness, and keeps beautifully in a cooler or thermos.

Ingredients:
  • 1 large cucumber, peeled and sliced
  • 1/2 cup fresh lime juice (from about 4–5 limes)
  • 1/4 cup honey or maple syrup (adjust to taste)
  • 4 cups cold water
  • 8–10 fresh mint leaves
  • Ice, for serving
  • Optional: Sparkling water for a fizzy version

Instructions:
  1. In a blender, combine cucumber slices, lime juice, honey, and 1 cup of water. Blend until smooth.
  2. For a smoother drink, strain the mixture through a fine mesh sieve into a pitcher.
  3. Stir in the remaining 3 cups of cold water and the mint leaves. Adjust sweetness if needed.
  4. Refrigerate for at least 30 minutes to let the flavors infuse. Serve over ice, or pour into a thermos or mason jar for a picnic. Add a splash of sparkling water before serving for an extra-refreshing fizz.

Tips:
  • Use frozen cucumber slices instead of ice to keep it cool without dilution.
  • Add lime slices and a few whole mint sprigs in your pitcher or jar for a pretty presentation.
