GRILLED CHICKEN WITH CUCUMBER-MELON SALSA

Ingredients
For the Grilled Chicken:
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Juice of 1/2 lime
For the Cucumber-Melon Salsa:
  • 1 cup diced honeydew melon
  • 1 cup diced cucumber
  • 1/4 cup finely chopped red onion
  • Juice of 1 lime
  • 1 tablespoon chopped fresh mint
  • Salt to taste
  • Optional: 1 small jalapeño, minced
Instructions
  1. In a bowl, toss the chicken breasts with olive oil, lime juice, garlic powder, smoked paprika, salt, and pepper. Let marinate for about 15 minutes.
  2. In a separate bowl, combine the honeydew, cucumber, red onion, lime juice, mint, and salt. Stir gently. Cover and chill until ready to serve.
  3. Heat a grill or grill pan over medium heat. Cook chicken for 6 to 7 minutes per side, or until internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing.
  4. Slice the grilled chicken and serve with a generous portion of cucumber-melon salsa. Optionally garnish with additional mint or lime wedges.

Tips:
  • Substitute honeydew with cantaloupe or watermelon if preferred.
  • Chicken thighs may be used instead of breasts; adjust cook time accordingly.
  • Pairs well with grains like quinoa or couscous, or with a fresh green salad.
