GRILLED CHICKEN WITH CUCUMBER-MELON SALSA

Ingredients
For the Grilled Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Juice of 1/2 lime
For the Cucumber-Melon Salsa:
- 1 cup diced honeydew melon
- 1 cup diced cucumber
- 1/4 cup finely chopped red onion
- Juice of 1 lime
- 1 tablespoon chopped fresh mint
- Salt to taste
- Optional: 1 small jalapeño, minced
Instructions
- In a bowl, toss the chicken breasts with olive oil, lime juice, garlic powder, smoked paprika, salt, and pepper. Let marinate for about 15 minutes.
- In a separate bowl, combine the honeydew, cucumber, red onion, lime juice, mint, and salt. Stir gently. Cover and chill until ready to serve.
- Heat a grill or grill pan over medium heat. Cook chicken for 6 to 7 minutes per side, or until internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing.
