Ingredients:
- 2 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
- 3 large eggs, hard-boiled and chopped
- 3/4 cup mayonnaise
- 2 tbsp yellow mustard
- 1/2 cup chopped celery
- 1/4 cup finely chopped red onion
- 2 tbsp sweet pickle relish (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- Paprika for garnish (optional)
Instructions:
- Place potato chunks in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil, then reduce heat and simmer for 10–15 minutes or until tender. Drain and let cool.
- In a large bowl, mix together mayonnaise, mustard, relish (if using), salt, and pepper.
- Add cooled potatoes, chopped eggs, celery, and red onion to the dressing. Gently fold until everything is evenly coated.
- Cover and refrigerate for at least 1 hour to allow flavors to meld. Garnish with a sprinkle of paprika before serving, if desired.
