Ingredients:
  • 2 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
  • 3 large eggs, hard-boiled and chopped
  • 3/4 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1/2 cup chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tbsp sweet pickle relish (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Paprika for garnish (optional)

Instructions:
  1. Place potato chunks in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil, then reduce heat and simmer for 10–15 minutes or until tender. Drain and let cool.
  2. In a large bowl, mix together mayonnaise, mustard, relish (if using), salt, and pepper.
  3. Add cooled potatoes, chopped eggs, celery, and red onion to the dressing. Gently fold until everything is evenly coated.
  4. Cover and refrigerate for at least 1 hour to allow flavors to meld. Garnish with a sprinkle of paprika before serving, if desired.

  • Chill overnight for even better flavor
