Chocolate Salted Caramel Tarts


Chocolate Salted Caramel Tarts – A buttery chocolate crust with a soft caramel filling, topped with chocolate ganache and flaky sea salt. Something that every chocolate and caramel fan should taste.

Ingredients
FOR THE CRUST
  • 1 1/4 cups all-purpose flour
  • 2 1/2 tbsp Dutch-processed cocoa powder
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 stick cold unsalted butter cut into small (1/2-inch) cubes
  • 1 egg
  • 1-2 tbsp ice water

FOR THE CARAMEL
  • 1 cup sugar
  • 6 tbsp unsalted butter, room temperature cut up into 6 pieces
  • 1/2 cup heavy cream
  • 1 tsp salt

FOR THE GANACHE
  • 1/2 cup heavy cream
  • 4 oz extra-bittersweet chocolate finely chopped
  • Sea salt crystals or kosher salt for garnish
