Mexican Taco Meatloaf


This Mexican Taco Meatloaf packs all the zesty flavors of taco night into one hearty, satisfying dish. Made with seasoned ground beef, salsa, shredded cheese, and taco spices, it's a fun, family-friendly dinner that pairs perfectly with rice, beans, or a crisp salad. Ingredients:
  • 2 lbs ground beef (85% lean)
  • 1 cup crushed tortilla chips (or breadcrumbs)
  • 1 packet taco seasoning
  • 1/2 cup salsa (plus more for topping)
  • 1/2 cup shredded cheddar or Mexican cheese blend
  • 2 large eggs
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • Optional garnish: chopped cilantro, sliced jalapeños, extra cheese

Instructions:
  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a loaf pan or line it with parchment paper.
  3. In a large bowl, combine ground beef, crushed tortilla chips, taco seasoning, salsa, cheese, eggs, onion, and garlic. Mix until well combined but not overworked.
  4. Transfer the mixture to the loaf pan and press evenly. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
  5. In the last 10 minutes of baking, spoon extra salsa and a bit more cheese over the top. Return to the oven until cheese is melted.
  6. Allow the meatloaf to rest for 10 minutes before slicing.

Serving Suggestions:
  • Serve with Spanish rice, refried beans, or a corn salad
  • Top with sour cream, avocado slices, or hot sauce
  • Great as leftovers in a taco or sandwich wrap
