GROUND BEEF EMPANADAS (KETO, LOW CARB)

Ingredients:
For the filling:
  • 1 lb ground beef (80/20 or lean)
  • 2 tbsp olive oil
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 2 tbsp tomato paste (low sugar)
  • 1 tbsp fresh parsley or cilantro, chopped (optional)
For the keto dough:

Instructions:
  1. Heat olive oil in a skillet over medium heat. Add onion and garlic; sauté until fragrant. Add ground beef, cook until browned. Stir in tomato paste, paprika, cumin, salt, and pepper. Simmer 5–7 minutes. Set aside to cool slightly.
  2. In a microwave-safe bowl, melt mozzarella and cream cheese together (about 1 minute, stir, then another 30 seconds). Mix in almond flour and egg. Knead into a smooth dough.
  3. Preheat oven to 375°F (190°C). Divide dough into 8 balls. Roll each between parchment into a thin circle. Add 1–2 tbsp beef filling in the center, fold over, and seal edges with a fork.
  4. Place on a parchment-lined baking sheet. Bake for 20–25 minutes or until golden brown.

Tips:
  • Brush with egg wash for a golden crust.
  • Reheat in air fryer or oven for a crispy finish.
  • Freeze raw empanadas and bake from frozen (add ~10 min).
