EASY CHICKEN RAMEN

Ingredients:
  • 2 packs ramen noodles (discard seasoning packets)
  • 2 boneless, skinless chicken breasts or thighs
  • Salt and pepper, to taste
  • 1 tbsp sesame oil or olive oil
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups chicken broth (low-sodium)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar (optional)
  • 1/2 tsp chili garlic sauce (optional for spice)
  • 1 cup sliced mushrooms
  • 2 boiled eggs, halved
  • 1/2 cup shredded carrots or spinach
  • Green onions and sesame seeds, for garnish

Instructions:
  1. Season chicken with salt and pepper. In a large pot or skillet, heat oil over medium heat and sear chicken 3–4 minutes per side until golden and cooked through. Remove and slice.
  2. In the same pot, sauté garlic and ginger for 1 minute. Add chicken broth, soy sauce, vinegar, and chili garlic sauce. Bring to a simmer.
  3. Add mushrooms and simmer 2–3 minutes. Add ramen noodles and cook according to package (usually 3–4 minutes).
  4. Divide noodles and broth into bowls. Top with sliced chicken, boiled eggs, carrots or spinach, green onions, and sesame seeds.

Tips:
  • Swap chicken for tofu or shrimp for a variation
  • Add miso paste for extra depth in the broth
  • Customize toppings with corn, bamboo shoots, or nori
